Ingredients
- 1 tbsp coconut oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp curry powder
- 1 can (15 oz) chickpeas, drained
- 1 can (14 oz) coconut milk
- Salt and pepper to taste
Instructions
- Sauté onion in oil until translucent; add garlic and curry powder.
- Stir in chickpeas and coconut milk; simmer 10 minutes.
- Season and serve over rice.
