Coconut Chickpea Curry

Creamy, weeknight-friendly vegan curry with coconut milk and chickpeas.

Ingredients

  • 1 tbsp coconut oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp curry powder
  • 1 can (15 oz) chickpeas, drained
  • 1 can (14 oz) coconut milk
  • Salt and pepper to taste

Instructions

  1. Sauté onion in oil until translucent; add garlic and curry powder.
  2. Stir in chickpeas and coconut milk; simmer 10 minutes.
  3. Season and serve over rice.
